Lamb or Beef Soup w/ Root Vegetables

This is an incredibly easy soup to make that will warm your soul and nourish your body. When I visit my grandma’s hometown Ejulve during the winter I always make this soup with locally grown lamb meat. Because the farmer is also the butcher and the seller, it’s easy to get certain parts of the animal that are difficult to buy from Finnish stores. If you have access to a butcher store, I recommend getting bony and gelatinous cuts, such as the feet and the face, as well as meaty ones.

Ingredients:

  • 1kg of meat and bony cuts
  • 1 leek
  • 1 carrot
  • 1 parsnip
  • Salt
  • Whole black peppercorns
  • Water

Preparation:

  1. Chop the meat and the vegetables into bits of similar size and shape.
  2. Place everything into a pot or slow cooker.
  3. Add salt and black whole peppercorns to taste.
  4. Add water until all ingredients are fully covered.
  5. Bring to a boil.
  6. Simmer for 2.5 hours, or for as long as the cut of meat you’re cooking requires.
